Refined charcoal-grilled perfection in a 70-year-old traditional townhouse, elevating the humble skewer to an art form.

Tucked away in the bustling Shimbashi district, Gensen Yakitori Isseki Sanchou Hon Ten (厳選焼鳥 一石三鳥 本店) elevates the humble skewer to an art form. Housed within a beautifully renovated 70-year-old traditional Japanese townhouse, the moment you step inside, the gentle aroma of charcoal and the warm glow of the counter transport you to a world of refined, grown-up indulgence.

The restaurant's name, Isseki Sanchou (一石三鳥), translates to "one stone, three birds"—a playful twist on the classic idiom that perfectly captures their unique style of offering three distinct flavors on a single skewer. This is a favorite haunt for discerning local businessmen and anyone seeking an authentic yet upscale yakitori experience.

Dining here is an immersive journey, best experienced through their meticulously crafted course menus. The "Kiji" (雉) Course is a standout, featuring eight charcoal-grilled skewers that include the signature tsukimi (moon-viewing) chicken meatball served with a rich egg yolk, alongside expertly grilled local chicken and seasonal vegetables. The succulent chicken wings are described as "melting in the mouth," and the moist, perfectly cooked liver is a frequent highlight for visitors.

The magic lies in the ingredients. The restaurant prides itself on sourcing high-quality meat through unique channels, including Date-dori chicken from Fukushima Prefecture and Shingen-dori from Yamanashi Prefecture, known for their exceptional juiciness and flavor. Each course is a multi-act performance. It begins with delicate appetizers like a savory minced meat aspic and a selection of seasonal sakizuke (small side dishes) that perfectly complement your drinks. The signature First-Time Potato Salad is a deceptively simple yet highly praised dish, while the 13-hour simmered chicken soup provides a deeply comforting finish.

A full selection of wines, sake, and shochu, carefully chosen by sommeliers, is available to pair with each course, making for a truly elevated dining experience.

Insider Tips: The restaurant strongly recommends making a reservation, often weeks in advance. The entire space is non-smoking and the dress code is smart casual.
